




The method of cooking brassica vegetables like broccoli can significantly reduce the amount of the anti-cancer compounds they contain, researchers at Warwick University have discovered.
Boiling the vegetables for long periods can destroy more than three-quarters of these healthy elements but other forms of cooking, like steaming or stir-frying, preserved their beneficial affects, the researchers found.
